This lesser-known cut is relatively lean but big on flavor due to the nice fat cap, and offers lots of bang for your buck. Many butcher shops remove the fat cap, but we choose to leave it on so you get the best of a lean cut of meat and the delicious flavor a fat cap brings. Ranch steaks can be seared or grilled on high direct heat, then sliced against the grain for a satisfying meal.
